Sarah and Jay- San Juan Capistrano engagement shoot

Tuesday, October 2, 2012

I always think that the simpler the shoot the better!  I love this fresh and clean shoot from William Kim featuring the lovely Sarah and Jay!  I met Sarah earlier that day for her trial run and we had so much fun creating both her wedding look and then simplifying it for this shoot!  I adore her and can't wait until the wedding in a couple weeks!!!

Men's hair

Monday, October 1, 2012

My guy asked me how he could change up his hair or what he could do differently with it!  He has a good clean cut that looks great on him but he isn't to into putting time into his hair.  A little product and he is off and running!  I think most men are this way but I think it's adorable that he asked for my opinion!  I gathered a few of my fave men's hair styles and of course the men wearing hair aren't that bad to peek at!
Your welcome ladies!!!!

Whole Wheat Banana, Blueberry and Hazelnut pancakes

I was whipping up some pancakes for my little ladies just recently and decided to get a little decadent with myself!  I try to keep my breakfasts interesting and substantial so I'm fueled up for the morning.

Whole Wheat Banana, Blueberry and Hazelnut pancakes
serves 1

2 palm size whole wheat pancakes ( We like Kodiak Kakes pancake mix)
half a banana
handful of blueberries
handful of chopped hazelnuts
drizzle of light maple syrup ( We like Aunt Jemima Lite)

Pair with your morning cup of joe and you are set!!

Cauliflower Pizza

Thursday, September 27, 2012

This pizza is amazing!!!!!!  You will totally get that "pizza indulgence" feel without the guilt!  We all attacked it like wolverines!!!!

Cauliflower Crust Pizza
Serves 2; Adapted from Your Lighter Side.
ingredients:
1 cup cooked, riced cauliflower
1 cup shredded mozzarella cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt
olive oil (optional)
pizza sauce, shredded cheese and your choice of toppings*

directions:
To "Rice" the Cauliflower:
Take 1 large head of fresh cauliflower, remove stems and leaves, and chop the florets into chunks. Add to food processor and pulse until it looks like grain. Do not over-do pulse or you will puree it. (If you don't have a food processor, you can grate the whole head with a cheese grater). Place the riced cauliflower into a microwave safe bowl and microwave for 8 minutes (some microwaves are more powerful than others, so you may need to reduce this cooking time). There is no need to add water, as the natural moisture in the cauliflower is enough to cook itself.
One large head should produce approximately 3 cups of riced cauliflower. The remainder can be used to make additional pizza crusts immediately, or can be stored in the refrigerator for up to one week.
To Make the Pizza Crust:
Preheat oven to 450 degrees. Spray a cookie sheet with non-stick cooking spray.
In a medium bowl, stir together 1 cup cauliflower, egg and mozzarella. Add oregano, crushed garlic and garlic salt, stir. Transfer to the cookie sheet, and using your hands, pat out into a 9" round. Optional: Brush olive oil over top of mixture to help with browning.
Bake at 450 degrees for 15 minutes.
Remove from oven. To the crust, add sauce, toppings and cheese. Place under a broiler at high heat just until cheese is melted (approximately 3-4 minutes).

Enjoy!
*Note that toppings need to be precooked since you are only broiling for a few minutes.

I topped with veggies we had on hand... red, green and yellow peppers, spinach, olives, mushrooms and I grilled up some onions!  DELISH!!!
